A whopping 720 million eggs are wasted every year in the UK, with a quarter of us unsure how to test whether eggs are fresh enough to eat after the best before date.
That’s why we’ve launched the #GoodEggChallenge to help you tell a good egg from a bad one – and save perfectly edible food from going to waste.
It’s simple; place your egg in water and if it sinks to the bottom and lays flat on its side, it’s very fresh. If it’s less fresh but still good to eat, it will stand up at the bottom of the bowl. If it floats to the surface, sadly it’s no longer fresh enough to eat.

Frittata
The ultimate way to use up lots of eggs and other fridge leftovers – simply fry your veggies, add beaten eggs, fry for a few minutes to cook the bottom, then stick the pan under the grill to finish the top. This works really well with any cooked veg you may have left from a Sunday roast - or simply veg that's lurking at the back of the fridge.
Banana pancakes
This is a great way to not only use up leftover eggs, but overripe bananas too - 1.4 million bananas are thrown out each day in the UK. To make four banana pancakes, just mash a large banana and then stir in two eggs, a pinch of baking soda and a splash of vanilla extract. Cook the batter as you would normal pancake mix.
Shakshuka
This is a really simple dish that uses cupboard essentials, and is filled with plenty of flavour. Simply create a sauce by gently frying off onion, garlic and peppers, then adding a tin of chopped tomatoes and a sprinkle of cumin and chilli flakes. Once that’s simmering, add your eggs to the sauce so they poach. Serve with lots of freshly baked bread!
Egg Fried Rice
This takeaway staple is just as easy to create at home and can help you save some of your sad looking veggies from the bin. Fry the veg, add a few beaten eggs, stir in your cooked rice and add soy sauce (or tamari for gluten-free recipes) to finish.
